
2020年5月,清华大学饮食服务中心运行管理科开始全面梳理所有食堂菜品,并在综合学生和各食堂经理的意见后,共选出666道菜肴,汇集成《水木食集——清华大学食堂基本伙标准化食谱》,向学校110周年献礼。
全书,分为上、中、下三篇,共26章节;包含666道食堂特色菜肴,其中:副食347道,主食247道,冷荤42道,凉菜30道。书中图文并茂地介绍了每道菜肴的原料、调料及规格、烹制流程、成熟技法、成品特点和主要营养成分含量,在指导菜肴的同时提升师生的营养健康意识,对于我校健康校园建设和高校食堂基本伙标准化工作有一定的参考意义。
序
历经14个月,浓缩了清华饮食人传承创新成果的《水木
食集—清华大学食堂基本伙标准化食谱》,终于在中国共
产党成立100周年、清华建校110周年之际出版,为这喜庆
之年增添了一抹“食在清华”的美味色彩。
基本伙是师生日常保障性团餐伙食,也称为“大伙”,
是学校公益性办伙和教育后勤属性的重要体现。1993年清华
大学饮食服务中心由膳食处转制成立。中心坚持以师生满意、
学校满意和职工满意为工作目标,秉承正确办伙方向,不断
创新体制机制,形成了独特的校园饮食文化,学校伙食已成
为办学软实力之一,寄托着一代又一代清华人舌尖上的记忆。
近年来,随着我国人民生活水平不断提高,师生对美好
校园生活的期盼日益增长,对饮食的口味、健康、营养、安
全、便捷等也有了越来越多的要求。如何持续提升“食在清
华”的餐饮品质?这是清华饮食人面临的新考验。“开拓创
新”是应对新考验的有效途径。我校饮食服务中心在开展标
准化食堂建设的过程中,把推进基本伙标准化作为其中一项
重要工作,其目的是将团餐菜肴制作过程中的经验化、定性
化升级为可定量的操作,从“少许”精细到“克”,明确各
食堂菜肴出品的质量标准,确保学校基本伙菜肴在色、香、
味、形、营养搭配等方面的质量稳定。为此,饮食服务中心
专门开辟场所,集中干部职工力量,全面梳理了学校
食堂基本伙菜肴总计2000余道,深入挖掘和整理学校
半个多世纪流传下来的基本伙主副食品种和风味小吃,
认真听取师生员工意见与建议后,共筛选出666道菜肴,
历经命名、实验、制作、品鉴、分析等环节,反复修改,
终于奉献出了这本食谱。
特别值得一提的是,为促进我校健康校园建设,
倡导师生员工健康饮食,食谱中除了图文并茂地介绍
菜肴主料、调料及加工过程,还特别附上每道菜肴的
主要营养成分含量,把营养健康意识融入其中,以帮助
和指导师生员工合理搭配饮食,助力师生员工实现“为
祖国健康工作五十年”目标!
到目前为止,团餐行业尚未有国家层面的行业生
产和产品标准。编撰“基本伙标准化食谱”是推动基本
伙向标准化转变而进行的一次有益探寻。我相信,这本
《水木食集—清华大学食堂基本伙标准化食谱》能够
成为一本“经典”的教科书,为我校食堂基本伙标准化
建设打下良好基础,为提升学校饮食队伍的烹饪专业
技能水平提供重要帮助。我也希望本书能为高校同行提
供有益借鉴,为高校伙食事业健康发展开拓新的思路,
更希望本书可以普惠社会餐饮行业和广大烹饪爱好者,
让更多的人分享“食在清华”的味道。
这本食谱可能并不完美,666道菜肴也只是学校食
堂基本伙众多菜品中的一部分,但它代表了我校饮食服
务中心过去的经验、现在的努力和对未来的探索。这里
有“食在清华”的精华,蕴含着“家的情怀”,是清华
饮食人热爱清华、爱岗敬业的集中体现,诠释了清华饮
食人“创造一流伙食,践行服务育人”的理念。

清华大学饮食服务中心紧密围绕学校培养人的根本任务,以“三服务、三育人”为宗旨,不断解放思想,转变观念,积极探索,大胆实践,走出了一条“育人为本、持续改革、不断完善”的伙食发展之路。清华大学饮食服务中心共有7个学生食堂、9个教工食堂以及多个特色餐厅,其中,基本伙高中低档菜品合理搭配,风味小吃种类齐全,餐厅各具特点,深受师生员工的喜爱。为进一步提升伙食质量,提高师生满意度,中心提出开展团餐标准化工作。《水木食集——清华大学食堂基本伙标准化食谱》,既是团餐标准化的工作总结,也是向向清华大学110周年献礼的作品。
魏强,男,汉族,1978年7月生,中共党员,博士学历,仪器科学专业,高级工程师,现任清华大学后勤党委副书记、清华大学饮食服务中心主任,兼任中国教育后勤协会伙食管理专业委员会常委副主任、北京市高等教育学会后勤研究会伙食管理专业委员会副主任。2005年8月进入清华大学后勤工作,2012年7月进入清华大学饮食服务中心工作,主要从事高校伙食管理、标准化建设、供应链管理及高校食品安全体系建设相关研究,在职期间发表高校餐饮文章4篇。
